Ironically, I came across this quotation while reading The Hunger Fix, a diet/self-help book about overcoming food addiction, which I found in the airport on my way to Argentina. I thought it would be an interesting and helpful read for my nutrition research because (surprisingly) despite my overwhelming sweet tooth, I’m a vegetarian, conscientious eater and a dedicated athlete! When I made the Cherry Lattice Pie for Mothers’ Day, I used the leftover dough to experiment making these wonderfully tasty mini apple pies! They were absolutely fantastic, especially “a la mode” served with some delicious vanilla ice cream!I absolutely loved these mini apple pies– I live for pie crust AND they make perfect individual servings!
Recipe: Pie Crust (See directions below…)
Directions: Cut dough (I used the top of a glass) into rounds and place in a greased muffin pan. Place chopped apples into a bowl and add sugar, lemon juice, lemon zest, dried orange peel, cinnamon, and pumpkin pie spice to taste. Scoop apple mixture into (uncooked) crusts and sprinkle with sugar. Bake until browned; the apples should be fragrant and oozing. Cool on a wire rack and serve with vanilla ice cream/whipped cream!
After many attempts, I’ve finally found a fantastic (and super easy!) microwave cake recipe!!! :) :) Every mug cake that I’ve made turned out dry, crumbly, and bland, but this mini cake was delightfully rich and delicious! I definitely recommend adding some whipped cream/ice cream to the cake for some added sweetness! Enjoy!

Chocolate Covered Katie is quite possibly one my favorite food bloggers. EVER. She bakes healthy and guilt-free vegan desserts that still taste fantastic! I use the non-vegan versions, though, because I think they taste richer and more authentic. Because I absolutely love her baked oatmeals, I decided to try her “Single Lady Cupcakes” for an afternoon snack. Muffins are one of my favorite desserts, and I like blueberry muffins even more, so this recipe was my soulmate! The muffins are fluffy, delicious, and best of all low-cal! Enjoy!
***NOTE: You can put whatever you like in the muffins, or leave them plain. Also, the recipe is designed to make one huge muffin, but I split it up into two medium sized ones instead.
