Here’s another one of Chocolate Covered Katie‘s scrumptious (and healthy!) recipes: banana bread baked oatmeal, or “boatmeal” as she calls it. I found Katie’s blog over the summer and made about all of her recipes! She actually inspired me to try baking healthy desserts, but I have to admit that they just don’t taste the same! Fluffy Chocolate Chip Pancakes

School’s out!! It’s time to celebrate the first day of summer with a delicious breakfast feast! I made a about a billion of these mouthwatering, fluffy pancakes this morning, such a great start to many more relaxing mornings to come! Although these pancakes were devoured within minutes, I always like to  freeze leftovers (if there are any left!) to save a little summer sunshine for another morning. Happy summer and celebrate with this amazing breakfast! You can make these pancakes your own: add blueberries, chocolate chips, or keep them a traditional old-fashioned stack. Enjoy!

Lemon Poppyseed Muffins

What’s better that celebrating a day off of school than with a yummy, fresh-baked breakfast?! Simply whip up this super easy muffin recipe for a delicious breakfast treat that’s available to-go! Because our lemon trees were filled with lemons, I was inspired to  make a fresh batch of lemon poppyseed muffins with a lemon glaze. The sweet and tangly icing complements the muffins so perfectly, I will definitely be using this it for another citrus pastry/dessert!!

Chocolate Chip Muffins

Unfortunately, this week is Finals Week, one of the most stressful weeks of the year. But to cheer up  my stressed (and grumpy) friends, I brought a batch of freshly-baked brain food to school.What could cheer someone up better than a homemade chocolate chip muffins on a gloomy morning?! As I expected, the muffins were gone in seconds and they left people asking for a glass on milk on the side!
