Hello, my name is Carissa. I’m a high school student with an unhealthy obsession with baking. Baking is my one-stop cure-all; despite a hectic life, I always find comfort in frosting a cake or making brownies to bring to school. Having a bad day? Bake. Want to make some friends? Bake. Need a new (and delicious!) hobby? Bake. For me, baking has always been both an art and a science, so let’s put on our lab coats and enter the kitchen!

I’ve only newly started baking because I only recently discovered stevia, a natural sugar replacement. The artificial sugar replacements are all bad for people, so my stevia discovery (healthy for kids and diabetics too) has been an epiphany for me. Most desserts have way too much fat and sugar for my lazy body so these adapted recipes are proving fun and, for me, edible! Other people usually never know the difference…

I served a plate of my xmas cookies this afternoon and they were a hit. So pleased! Try http://cookupastory.wordpress.com/2012/11/07/skinny-brownies-tricks-and-treats/ for starters. The beet cake is an amazing treat and Isla’s xmas shapes were judged excellent too :). There’s a fab cookie recipe in Vinny’s book, as well, but will likely alter that recipe for further calorie savings now that I know more. Read my post about stevia for more info

I loved the suggestion of wine or bread. I aedlary practice the other restaurant rules, but I have one other suggestion. Restaurant dinners are nearly always large enough for at least 2 meals. I will often ask for a take-home box WITH my meal and put at least half of my meal in the box BEFORE I eat. This works on the road, too, if you have a cooler and hotel room with a microwave.
