Today, I had to take a round of SAT Subject tests. While it’s not the ideal way to start off the weekend, it is an excuse to eat an extraordinarily delicious breakfast! So, I combined some of my favorite things–banana and french toast–for this AH-MAZING baked banana bread pudding. I’ve been dreaming of making this recipe ever since I first found it a very long time ago, and it certainly lived up to my expectations. I love it because it reminds me of a pull-apart or monkey bread, two dishes I’ve always wanted to make. Believe it or not, I think I would’ve preferred this breakfast bake without the chocolate chips to make it have more of a coffee-cake type feel. And, other than being unbelievably delicious, this bread pudding gets bonus points for being a “skinny” recipe! Enjoy!!

I took that SATs today too! Although I had a cookie bar for breakfast (probably not the best option for giving energy, but whatever). I will have to try this because I love banana bread!
