For my grandma’s birthday, she requested a dessert from her two favorite sweet categories, chocolate and ice cream, so what else was I to do but make a delicious chocolate ice cream cake?! I usually don’t even let my family keep Oreos in the house because I would eat them all within seconds, but I thought this a fitting occasion to make an exception! To me, the only thing better than Oreos themselves is an Oreo dessert…a tall, dark, and handsome chocolate cake doesn’t stand a chance against an Oreo cookie or cupcake, and certainly not an Oreo Ice Cream Cake! (I learned this after making my Oreo Chocolate Layer Cake!) I had also never made an ice cream cake before, so I was especially excited to try this recipe! The cake part was fantastic even just on its own, but layered with the amazing cookies & cream ice cream, it was heavenly! I topped the cake with vanilla whipped cream instead of traditional frosting, which was the perfect choice because it balanced the sweetness of the ice cream and also froze like another layer of the cake. And of course, decorating the cake, which has become my favorite part of the process, truly added the final touch to this incredible dessert…but even if the cake lacked some chocolate sauce and garnishes, it would still taste just as fantastic and delicious!
