If I could, I would eat breakfast for every meal! I would also live in the kitchen and bake all day…as long as I wouldn’t have to wash the dishes! My mom and I actually have a deal that if I bake, she will clean up, granted that she gets the first bite of whatever dessert is in the oven! Last Sunday it rained again, so instead of going for my usual morning workout, I stayed at home and made pancakes for my family, an unexpected treat for them because I never give up my cherished weekend workouts! Because I LOVE blueberry muffins so incredibly much, I decided to give these blueberry buttermilk pancakes a try; even just their name sounded delicious! Well, their name surely was correct because these amazing pancakes were light, fluffy, sweet, and simply magical! (Have I mentioned that I LOVE breakfast?!) With or without the blueberries, these pancakes are incredible, although I do believe that the blueberries add an extra dimension of flavor that makes the pancakes even more wonderful! Just drizzle on some Log Cabin maple syrup and you’re good to go! Enjoy!!

***NOTE: This is a fantastic pancake recipe regardless of what additives you use. You can substitute the blueberries for chocolate chips, walnuts, pecans, apples, etc…

I’m with you. I’m in the breakfast mood until 2pm. Most of times, my lunch is a cappuccino with croissant ;-)
Sounds absolutely perfect! My type of lunch!
I totally agree with you – breakfast is my favourite meal. I don’t have it enough for dinner – this definitely needs to change. Your pancakes look so fluffy and moist!
Thank you!!
Those pancakes look delicious! You are lucky to have a mom who is willing to clean up after you! My mom usually screams whenever I am in the kitchen because of the mess I make, but as they say, you aren’t really cooking until you got flour all over the floor!
Haha I know! Thank you!
