Chocolate Molten Lava Cakes

Ironically, I came across this quotation while reading The Hunger Fix, a diet/self-help book about overcoming food addiction, which I found in the airport on my way to Argentina. I thought it would be an interesting and helpful read for my nutrition research because (surprisingly) despite my overwhelming sweet tooth, I’m a vegetarian, conscientious eater and a dedicated athlete! But regardless of my contradictory relationship with food, I recognize that I can never escape my true love--CHOCOLATE! I’ve also identified that many of my favorite desserts are served “a la mode“, for I have an uncontrollable weakness for any warm chocolate cake, apple crumble, or peach cobbler topped with a good, old scoop of vanilla bean ice cream! Perfectly, these molten chocolate lava cakes could not be a more fitting combination of my two favorites! The cake was indeed a warm chocolate mountain of lava fudge! And with chocolate sauce and some gooey vanilla ice cream, a bite of this cake transported me to heaven! It’s an incredible sweet masterpiece of chocolate, fudge, ice cream and a little love…need I say more?! I know you’ll enjoy this recipe! Remember to lick the plate clean!

***NOTE: To save a bunch of calories, I like using frozen cool whip instead of a scoop of ice cream! I also like the cool whip because its texture/consistency tastes less fatty, which I prefer.

  1. Mmm! This looks divine! :) Do you happen to have a recipe for whipped cream that you enjoy? I don’t particular care for the ingredients in cool whip itself but love your idea of frozen Cool Whip instead of ice cream!
