My dad is on a “nut diet” to loose the pounds he’s gained from his double bagel mornings; so to accompany the Southern Pecan Pie from last night, these Almond Biscottis somewhat fit into his nutty diet. I added (mini!) chocolate chips to the cookies and dipped the bottoms in chocolate to make these biscottis sweeter and even more delicious! I prefer softer cookies rather than jaw-breaking, crispy cookies, so I cooked the sliced biscottis for about 1/2 of the directed time. They were AMAZING!!!! Soft, chewy, macaroon-like, and delicious! Choose your type! Enjoy!
