Baked Banana Bread Oatmeal (Healthy!)

Here’s another one of Chocolate Covered Katie‘s scrumptious (and healthy!) recipes: banana bread baked oatmeal, or “boatmeal” as she calls it. I found Katie’s blog over the summer and made about all of her recipes! She actually inspired me to try baking healthy desserts, but I have to admit that they just don’t taste the same! But, this oatmeal tastes so delicious, that you’ll never tell it’s actually healthy, especially by adding chocolate chips, it really tastes like my mom’s famous chocolate chip banana bread! Also, try  baking instead of making an individual banana bread, pour the oatmeal mixture into a muffin pan for  chocolate chip banana muffins!! Eat as a snack or a breakfast to-go! Enjoy!!

Recipe: Banana Baked Oatmeal

**NOTE: I added chocolate chips, but you can also add walnuts, etc. I used extra vanilla for flavor and used maple syrup as my sweetener.
